Nutcake and Yogurt Parfait

This recipe, courtesy of the culinary goddesses at Effie's Homemade, shows how creative you can be with combinations of fruit, yogurt, and Effie's award-winning biscuits. The pecan Nutcakes offer a rich, slightly salty, crunchy counterpoint to the creamy yogurt and the sweet fruit. You can't ask for more in flavor and texture from an easy, light, and fresh dessert.  It's a perfect finish for a summer brunch or barbeque. Bon appetit!

2 cups plain yogurt or Greek yogurt
1 T. honey (or take it up a notch with Lavender Honey)
1 t. orange or lemon zest
2 t. orange or lemon juice
2 small bananas
1 ½  cups raspberries or blueberries
6 Effie's Pecan Nutcakes, coarsely crumbled or chopped

Combine the yogurt, honey, zest and juice.

Sprinkle the chopped Nutcake into the bottom of your dessert glass or parfait dish. Top with some sliced or diced banana and a sprinkle of berries. Dollop the yogurt mixture over the berries. Repeat the layers starting with the Nutcakes and finish with fresh berries on top. 

Variation: Substitute ½ t. vanilla for the orange / lemon zest and juice.
