Lavender Lemonade Mojito

Mojitos are my favorite summer cocktail. Something about the combination of the citrus, mint, and rum tastes like the most perfect refreshment to me. This recipe takes this classic drink to a whole new level, using homemade lavender simple syrup and lemonade muddled with mint. Delicious! Serves 4.

Ingredients:

  • 1 cup freshly squeezed lemon juice, from 4-7 lemons
  • 1 small bunch fresh mint
  • 2 cups water
  • 1 cup light rum
  • 3/4 cup lavender simple syrup (recipe below)

Lavender simple syrup:

  • 1 cup granulated sugar
  • 1 cup water
  • 1/4 cup dried culinary-grade lavender (our Lavender Tea is perfect for this)

To make the lavender simple syrup:

  1. Combine sugar, water, and dried lavender in a medium saucepan, stir, and bring to a boil.
  2. As soon as it comes to a boil, lower to a simmer and let simmer for about 10 minutes, until it thickens. Keep stirring occasionally.
  3. Turn off the heat, cover the saucepan, and let it steep for about an hour.
  4. Strain syrup through a mesh sieve to remove the lavender buds, and pour into an airtight container. Place in fridge to cool.

To make the mojitos:

  1. In a pitcher, muddle mint leaves with lemon juice until well combined. Add water, rum, and 3/4 cup chilled lavender simple syrup. Stir.
  2. Pour drink into four ice-filled glasses.
